Peanut Noodles

Bowl of peanut noodles with chopped peanuts and cilantro

Make these peanut noodles when you want rice noodles (or spaghetti) tossed in a peanut butter sauce you whisk in a bowl: peanut butter, soy or tamari, rice vinegar or lime, a little maple, sriracha, water to thin. This is not fried zucchini. Zucchini noodles are a grain-free swap if you want them, not the headline. Don’t boil the peanut butter in the pasta water. Toss off the heat so the sauce stays creamy instead of seizing into paste. Warm water loosens it; extra soy just salts it.

Why You’ll Love This Recipe โค๏ธ

  • Sauce in 2 minutes while the noodles cook.
  • Pantry peanut butter, not a jar of satay you can’t find.
  • Heat is a teaspoon of sriracha, not a mystery chili oil unless you have it.
  • Cold leftover lunch if you loosen with water. Day-one hot is nicer.
  • Zucchini option if you’re skipping the noodles โ€” still the same sauce.

Ingredients ๐Ÿ›’

Noodles

  • 8 ounces (225 g) rice noodles or spaghetti (or 4 medium zucchini, spiralized, for the grain-free version)

Peanut sauce

  • ยฝ cup creamy peanut butter (not the last dusty tablespoon โ€” packed ยฝ cup)
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar or 1 tablespoon lime juice (or 1 teaspoon apple cider vinegar in a pinch)
  • 2 teaspoons maple syrup or honey
  • 1โ€“2 teaspoons sriracha
  • 1 teaspoon toasted sesame oil, optional
  • 4โ€“6 tablespoons warm water, to thin
  • 1 garlic clove, minced or grated, optional

To finish

  • Sliced green onion
  • Chopped peanuts, optional
  • Cucumber or shredded carrot, optional crunch
  • Lime wedges

Creamy peanut butter. Natural PB that has separated needs a thorough stir or the sauce is oil then paste. Crunchy works if you like bits. Almond butter is the paleo-path swap from the pin’s cousin recipe โ€” then it’s almond noodles.

ยฝ cup PB for 8 ounces of noodles is a coating, not soup. 3 tablespoons is the smaller paleo-card amount meant for zucchini or 1ยฝ cups cooked noodles. That’s a snack portion. This ยฝ cup batch is dinner for 4 with 8 ounces dry pasta.

Rice noodles overcook in a blink. Follow the package, usually soak or a short boil. Spaghetti is more forgiving. Don’t cook rice noodles like linguine for 12 minutes.

If you wanted a chicken-and-noodle skillet instead of a peanut toss, honey garlic chicken meal prep is that bowl. Don’t dump peanut butter into that sauce.

Equipment

A pot for noodles. A bowl and whisk or fork. Tongs. A colander. Warm water in a cup to thin the sauce.

How to Make It ๐Ÿ‘ฉโ€๐Ÿณ

Cook noodles in salted water per the package until just tender. Rice noodles: taste early. Drain. Don’t rinse if you want sauce to cling on wheat pasta; rice noodles often get a rinse so they don’t clump โ€” then the sauce has to work harder, so don’t over-rinse into ice-cold sticks unless you’re serving them cold.

While they cook, whisk peanut butter, soy, vinegar or lime, maple, sriracha, sesame oil, garlic. It will look thick and broken. Whisk in warm water 1 tablespoon at a time until it’s pourable, like heavy cream. Cold water from the tap fights you; warm water from the kettle (not boiling on the PB) loosens faster.

Toss hot noodles with the sauce off the heat. If it seizes, another splash of warm water or a spoon of pasta water (wheat noodles). Green onion, peanuts, cucumber or carrot if using. Lime.

Zucchini version: spiralize, salt 10 minutes, squeeze dry, or a 2-minute sautรฉ so they’re not raw fridge noodles. Toss with a smaller sauce (start with 3 tablespoons PB and the rest of the small-batch ratios: 1 tablespoon tamari, 1 teaspoon vinegar, 2 teaspoons maple, sriracha) โ€” zucchini doesn’t drink sauce like 8 ounces of dry pasta.

Why the Technique Works

Water thins, heat seizes. Peanut butter on a ripping burner turns glue. The residual heat of drained noodles is enough. If you dump PB into boiling pasta water, you get oily scum and clumps.

Soy is salt. Maple is round. Vinegar or lime is the lift. Skip the acid and it tastes like peanut butter on spaghetti, which is what it is. Skip the sweet and sriracha reads harsher.

Warm water, not extra soy, to thin. Extra soy is a salt bomb. Extra PB without water is cement.

8 ounces dry is 4 modest bowls or 3 hungry ones. A pound of pasta with this sauce is dry noodles with a rumor of peanut. Double the sauce if you double the noodles.

Cold leftovers tighten. That’s peanut butter in the fridge. Loosen with warm water, don’t microwave into a brick then call it ruined without trying water first.

Cooking Tips

Taste the sauce before it hits the noodles. Easier to fix salt and heat in the bowl.

A little reserved pasta water is insurance for wheat noodles. Rice noodle water is starchy in a different way โ€” warm tap is safer.

Variations and Substitutions

Almond butter: same method. Different flavor.

Tahini: sesame noodles, not peanut. Still thin with water.

Protein: leftover chicken cooked to 165ยฐF, tofu, a fried egg. Don’t undercook chicken because “it’s just a garnish.”

No sriracha: skip, or a pinch of red pepper.

Coconut aminos instead of soy: sweeter, less salt. Cut the maple a little.

Serving Suggestions

Bowl, extra lime, cucumber. It’s a full dinner with a fried egg or leftover chicken. Don’t add a second recipe for spring rolls because peanut sauce exists.

Storage, Freezing & Reheating

Fridge 3 days. Loosen with warm water. Eat cold or barely warmed. High heat splits the oil out.

Don’t freeze assembled noodles. Sauce alone can fridge a week; it will thicken. Whisk in water.

Pack sauce and noodles separate for lunch if you can. Toss at noon.

Troubleshooting

Seized paste: too thick, too hot, or natural PB not stirred. Warm water, off heat, whisk hard.

Bland: not enough soy or acid, too many noodles. Taste, lime, salt.

Too salty: extra soy to thin, or regular soy plus salted pasta water plus peanuts. Water, lime, a little more PB.

Gummy rice noodles: overcooked, sat in the colander. Shorter cook, toss immediately.

Oily: natural PB not emulsified, or you added extra sesame oil. Whisk longer with warm water.

FAQ

Rice noodles or spaghetti?

Both. Rice noodles are the usual “peanut noodle” texture. Spaghetti is what most kitchens have.

Can I use powdered peanut butter?

Reconstitute it first. Straight powder in soy is dust.

Is this spicy?

Only as much sriracha as you add. Start with 1 teaspoon.

Why not cook the sauce?

You can warm it gently. Boiling it is how it breaks. This method skips that risk.

Zucchini instead of pasta?

Yes โ€” less sauce. Still peanut noodles in spirit, different calorie math.

Nutrition, Allergens & Dietary Notes

Approx, per 1 of 4 servings with rice noodles (no extra peanuts):

  • Calories: 420โ€“520
  • Protein: 14โ€“18 g
  • Carbs: 48โ€“58 g
  • Fat: 20โ€“26 g

Contains: peanuts, soy, possibly wheat (if spaghetti). Sesame if you use the oil. Not nut-free. Maple vs honey: honey isn’t vegan. Don’t call it satay from a restaurant. Rice noodles are often gluten-free; soy sauce is not unless it’s tamari labeled GF.

Final Thoughts

Cook noodles, whisk peanut butter with soy, acid, a little sweet, water until it pours, toss off heat. If it turns to cement, it needed water, not more soy.
