Can I cook it 8 hours on low while I’m at work?

Do I have to thicken it?

No. The sauce is thinner without cornstarch. Still good on rice.

Can I use regular soy sauce?

The beef will still cook. It will not be gluten-free. Regular soy is brewed with wheat. Same for regular Worcestershire and unlabeled bouillon. If you needed this genuinely gluten-free, stay with certified tamari (or GF soy), certified Worcestershire or none, and bouillon you checked.
