5 Super Easy Crock Pot Dinners

Five super easy crock pot dinner photos in a collage

These 5 super easy crock pot dinners are all built on about 3–4 chicken breasts and a short sauce list: BBQ, orange-marmalade, creamy ranch, salsa-bean, and ranch taco. Same rule on every pot: 165°F in the thickest piece, then shred. Don’t cook boneless breasts 8 hours on high because a pin said “set it and forget it.” Modern cookers run hot. Thaw the chicken in the fridge — frozen breasts in a slow cooker sit too long in the danger zone.

Why These 5 Work

  • One method: chicken in, sauce on, lid, thermometer, shred.
  • Grocery-list sauces — bottles and packets, not a 12-spice project.
  • Four breasts feed 4–6 depending on buns vs bowls.
  • High 3–4 hours or low 5–6 is the honest window for breasts. Check early.
  • Each listing is a full formula, not a teaser that sends you to a dead pin.

At a Glance

Base: 3–4 boneless skinless chicken breasts (about 1½–2 pounds) per recipe  ·  Cooker: 6-quart, sprayed  ·  Doneness: 165°F, then shred  ·  Don’t: frozen chicken, extra cups of water “just in case,” lid-peeping every 20 minutes

Shared Rules (Read Once)

Pat chicken dry enough that the sauce isn’t sliding off ice. One layer if you can. Sauce over the top. Lid.

Start checking on high at 3 hours or low at 4–5 hours. If it’s 165°F, you’re done even if a blog said 8. If it’s 150°F, keep going in 30-minute steps. Overcooked breast shreds because it’s dry.

Thighs forgive a long low better than breasts. Same 165°F.

After you shred, 15–20 minutes in the sauce on warm is plenty. Another 2 hours “to soak” is string city.

1. BBQ Chicken Sandwiches

Chicken in the cooker. Whisk 1 (16-ounce) bottle BBQ sauce, ½ cup zesty Italian dressing, and ¼ cup packed brown sugar. Pour over. Cook to 165°F. Shred, toss in the sauce. Pile on buns.

Italian dressing is the tang so it’s not only sweet bottle BBQ. Skip the brown sugar if your sauce is already candy. Extra liquid? There isn’t any — don’t add water. Too sweet at the end: a splash of vinegar or more Italian, not more brown sugar.

Buns, slaw if you have it. Leftover meat is sandwiches again, not a nacho recipe we didn’t make.

2. Orange BBQ Chicken

Chicken in. 1 cup BBQ sauce + 1 cup orange marmalade + 1–2 teaspoons soy sauce. Cook to 165°F. Shred, toss.

Marmalade is orange peel and sugar. Cheap marmalade works. Jam without peel is sweeter and less bitter — still fine. 2 teaspoons soy is salt, not a teriyaki bath. Serve over rice. The sauce is sticky; it will look like a lot until the chicken drinks it after shredding.

If it scorches on high, your cooker runs hot and sugar sat on the wall. Spray, and don’t cook this one 6 hours on high.

3. Creamy Ranch Chicken (Packet Version)

Chicken in. Sprinkle 1 (1-ounce) ranch packet and 1 (0.6–0.7-ounce) Italian dressing packet. Pour 1 (10.5-ounce) can cream of chicken soup over (don’t add a can of water). Cook to 165°F. Shred. Stir in 4 ounces cream cheese, cubed, until it melts — cooker on warm, not another 2 hours on high.

Cream cheese at the end so it doesn’t break. Packets are salty; don’t salt the chicken first unless you tasted the sauce.

This dump is not the potato-and-carrot crock pot ranch (potatoes and a family-size can of soup), and it’s not the skillet creamy ranch chicken with cutlets and sour-cream gravy. Three different dinners. If you wanted 35 minutes and no packets in a cooker, make the skillet.

4. Salsa Chicken with Black Beans and Corn

Chicken in. 1 (16-ounce) jar salsa, 1 (15-ounce) can black beans rinsed, 1 (15-ounce) can corn drained (or 1½ cups frozen). Cook to 165°F. Shred in the pot.

Chunky salsa holds up. Thin taco sauce turns to tomato water — skip extra broth. Rinse the beans. Frozen corn can go in frozen; it will water the pot a little.

Tortillas, rice, or a bowl with cilantro and lime. That’s this recipe. Don’t add a second burrito-bowl meal-prep article here.

5. Ranch Taco Chicken

Chicken in. ½ cup chicken broth, 1 (1-ounce) ranch packet, 1 (1-ounce) taco seasoning packet. Cook to 165°F. Shred. If it’s soupy, lid off 10 minutes or drain a splash before you fill tacos.

½ cup broth is enough. A cup is taco soup. Two packets are salty — low-sodium broth, no extra salt, lime at the table.

Tacos. Leftover filling is tomorrow’s tacos. If you wanted queso in the pot, that’s the slow cooker queso chicken tacos recipe, not this listing.

Which One Should You Make?

Buns in the house: #1. Rice: #2 or #4. Tacos: #5 (or the queso post). Need it creamy: #3, cream cheese at the end. Don’t cook two of these in one 6-quart cooker at the same time and call it meal prep — the sauces fight.

Shopping Notes

Five dinners is five packages of chicken if you make them on five nights, or one grocery run and a freezer of raw breasts you’ll thaw overnight. Don’t thaw on the counter. BBQ sauce brands vary from vinegar to molasses — taste the bottle. Ranch packets are not bottled ranch. Marmalade lives near the jam.

Storage

Shredded chicken in sauce: fridge 3–4 days. Reheat to steaming. Freeze up to 2 months; cream cheese (#3) can separate — heat and stir. Freeze meat, not buns or tortillas already filled.

FAQ

Can I use frozen chicken?

Thaw first. USDA doesn’t want frozen chicken in a slow cooker.

High or low?

Low is gentler. High if you’ll be there at hour 3 with a thermometer.

3 breasts or 4?

4 if they’re small. 3 huge ones are still ~2 pounds. Sauce amounts above assume ~1½–2 pounds.

Can I double a recipe?

In a 7-quart, maybe, still in a layer, more time to 165°F. A packed 4-quart no.

Why not 8 hours?

Boneless breasts are done earlier in most modern pots. 8 hours is how they dry out.

Final Thoughts

Five sauces, same chicken, 165°F, shred. Cream cheese and extra mix-ins after. If a listing needed potatoes or queso, that’s a different post — not a bonus dump in this cooker.
